History and Corporate Profile

Don Farruco is the brand of Itzaina y Otros SRL, based in Los Cerrillos, Canelones, Uruguay. Committed to health promotion and sustainability efforts, Don Farruco is the largest producer of shiitake mushrooms in Uruguay.

The company was founded in 2014 by Roberto Itzaina, an entrepreneur with extensive management experience in both national and multinational organizations. Together with his brother Francisco, he decided to invest in the development of quality natural food products, traditionally not used in Uruguay.

Don Farruco develops his operations in an agricultural establishment with strictly controlled dependencies for the production of delicious and nutritious fungi, rich in proteins, vitamins and minerals, free of gluten and with medicinal properties. Shiitake is grown in a substrate composed mainly of sawdust and kept under strict conditions at all stages of production, from incubation to fruition. Then it is harvested and quickly conditioned for sale.
